Buckwheat Muffins
- 1/2 cup coconut flour
- 1 1/2 cups buckwheat flour
- 2 heaped tsp baking powder
- 1/2 - 1 cup raw or coconut sugar
- 1/2 cup coconut oil
- 1 cup choice of milk OR
- 1/2 cup milk & 1/2 cup fresh fruit juice/pulp
- 2 pasture eggs (room temp)
- 1 tsp vanilla bean extract
- 1/2 cup hot water
- 1-2 cups your choice of fillings (blueberries, apples, sultanas, nuts, chocolate chips, veges, feta - endless options!)
Preheat oven to 180 degrees Celsius
Combine flours & baking powder
In separate bowl, whisk sugar with oil, eggs, milk & vanilla
Add to dry ingredients & mix well
Add hot water & mix well
Stir in filling
Pour evenly into 12x muffin mould
Bake 20 - 25 mins
