Black Forest Brownies

  • 1 cup buckwheat flour
  • 1/2 cup coconut flour
  • 1 cup cacao
  • 1 1/2 cup coconut oil
  • 1 cup raw or coconut sugar
  • 4 large pasture eggs
  • 1 cup of dark chocolate chips
  • 1/2 cup goji berries
  • 1 tsp vanilla bean extract
  • 1/4 cup dark chocolate chips for topping (optional)
  • Pinch of cayenne pepper (optional)
  • Pinch of pink or sea salt
Preheat oven to 175 degrees Celcius
Combine flours, cacao, salt & pepper
In separate bowl, whisk sugar with oil & vanilla then add eggs in one at a time
Add dry ingredients to wet & mix well
Stir in chocolate chips & goji berries
Pour into oiled 20cm baking dish & top with optional extra chocolate chips
Bake 15 - 20 minutes
*skewer for testing will be wet in the middle but should come out mostly dry on edges - brownie will continue to cook while cooling
Store in fridge or freezer for fudge texture
