Banana Bread

  • 5 overripe bananas (frozen then defrosted is best)
  • 1/2 cup coconut oil
  • 1/2 cup coconut milk
  • 1 tsp vanilla bean extract
  • 1 1/2 cups buckwheat flour
  • 1/2 cup coconut flour
  • 2 heaped tsp baking powder
  • 1 cup walnuts or other nuts (optional)

 

Preheat oven to 175 degrees Celsius
Combine flours & baking powder
In separate bowl, mash bananas with oil, milk, & vanilla
Add dry ingredients to wet & mix well
Stir in nuts
Bake in oiled loaf tin for 35 - 40 mins
Store in fridge for up to 5 days
